Can anyone still copy the text?
Not by selecting it: the result contains images only, with no text layer. Someone could still retype it or run text recognition (OCR) on it, so this deters copying rather than making it impossible.
Will the file get bigger?
Usually, because pages are stored as pictures. Choose Standard quality for the smallest file, or run Compress PDF afterwards.
Can I undo it?
No. Keep your original PDF if you may need the text later.
Does it keep links and form fields?
No. Links, bookmarks and form fields are removed, because each page becomes a flat image.
